Our Pineapple Eau de Vie is a testament to craftsmanship and patience. Produced from a fruit that presents a unique challenge due to its high natural sugar content, pineapple undergoes a shortened fermentation cycle, making it a delicate process to perfect. In its fresh form, the pineapple strikes a perfect balance between sweetness and tartness, but in its distilled form, the focus shifts to the deeper, more nuanced essence of the fruit, highlighting the husk and its more subtle characteristics. The careful distillation process brings out the full potential of the pineapple, unveiling its true depth and complexity, while shaking up the EDV reveals a clearer, more defined expression of its tropical nature.

Rhine Hall worked hard to cultivate a like-minded international partner for our production in Mexico. Our Pineapple is made with the same passion for Eau de Vie we have always had and is distilled in cooperation with partners that bring years of experience and resources to our process. We cut off the husk of the pineapple, remove the head & core, and puree the rest. After a shorter fermentation, we then distill in a stainless steel alembic still used for Mezcal production. This highly refined process results in an incredible liquid, and we invite you to meet our Pineapple Eau de Vie.

Pineapple Cocktail Recipes

 

Tropical Old Fashioned

1 oz Rhine Hall Pineapple EDV

1 oz Bourbon

1/4 oz Demerara Syrup

2 Dashes aromatic bitters

Combine all ingredients | stir | Serve in rocks glass | garnish with pineapple leaves

Pineapple Daiquiri

1 oz Rhine Hall Pineapple EDV

1 oz Rum

¾ oz Fresh Lime Juice

¾ oz Demerara Syrup

Shake + strain into glass (Nick & Nora or coupe)  |   garnish with cherry

Pineapple Mojito

1 1/2 oz Rhine Hall Pineapple EDV

3/4 oz Fresh Lime Juice

1/2 oz Simple Syrup

5 Mint Leaves

Soda Water

Combine all ingredients except soda water | Shake + Strain into a collins glass with fresh ice | Top with Soda Water | Garnish with fresh mint  

Piña Colada

1 1/2 oz Rhine Hall Pineapple Brandy

1/2 oz Fresh Lime Juice

1/2 oz Pineaple Juice

3/4 oz     Coconut Cream

Shake Hard | Dump into a Collins Glass | Garnish with Grated Nutmeg and a Straw

White Negroni

1 oz Rhine Hall Pineapple Brandy

1 oz Dolin Blanc Vermouth

1 oz Salers Aperitif

Stir with ice   | Strain into a coupe or over a large cube | Express and Insert Lemon Peel

Pineapple Ricky

1 1/2 oz Rhine Hall Pineapple Brandy

1/2 oz Fresh Lime Juice

1/2 oz Jalapeno Syrup

Fresh Pineapple

Soda Water

Muddle 2 small pieces of pineapple in shaker | Combine all ingredients except Soda Water | Shake hard | Strain over fresh ice in a collins glass | Top with Soda | Garnish with Pineapple
