Reserve Cherry Brandy

For our Cherry Brandy, we use a tart style of cherry commonly found in Michigan and Wisconsin. The cherries are smaller and less sweet than most of the varietals we think of when we purchase cherries from the grocery store. We work to make sure that the pits are extracted from all of the cherries so that there are no off or bitter flavors that transfer into the eau de vie. The pits are added back into the mash during the three week fermentation period, which helps to create a deep and rich spirit with lots of dimension.
The Reserve Cherry Brandy is exclusive to the tasting room on Fulton Street. After the fermentation of tart cherries it was distilled and then left to rest in barrel. The distillate rested in a new American charred oak barrel for exactly one year.

1/4 oz Honey Syrup
2 dashes Angostura Bitters
Stir with ice | Serve over large ice cube | Express + insert lemon peel

2 oz Rhine Hall Reserve Cherry Brandy
1/2 oz Fresh Lemon Juice
4 Fresh Raspberries
1 tsp Vanilla Extract
2 dashes Angostura Bitters
2 dashes Orange Bitters
Muddle Raspberries | Shake with all Ingredients | Fine Strain over crushed ice | Garnish with Berries and Mint Bouquet
