A Closer Look: Cherry Brandy

July marks the beginning of our Midwest fruit season, and Cherry is always up first! The tart cherries make their way from Michigan and Wisconsin to Rhine Hall in mid July, and so begins the process of getting fruit prepped and ready for fermentation. The cherries we use are smaller and less sweet than most of the varietals we think of when we purchase cherries from the grocery store. One thing people always want to know, what do we do with the pits? Well, some of them head right into the tank to add some really cool dimension to the spirit, and some get bounced out and sent to compost. 

Cherry Brandy is known throughout Europe as Kirschwasser or Kirsch. Kirschwasser or Kirsch is a clear colorless fruit brandy, commonly made of morello cherries, which are dark in color and typically sour. If you're new to this spirit, we promise to  please with this delightfully bright, and smooth spirit.
